What would it be? Here is my choice, I'd take the Celica because I feel like my chances of crashing immediately would be slightly less.

Wow, an open-ended question and everyone so far is shooting for the moon. I personally will shoot for the stars. I'll take an hour in any 2013 F1 car that's not a Red Bull. I promise I'll start slow and work my way up to Marussia
level lap speeds. I've been to a few races in person and watched a lot on TV and it just amazes me the level of grip these thing have.

If I could only spend an hour total in the car, I'd pick something totally simple so I could spend more time driving than figuring out and learning. You know, simple, like a Ferrari 250 GTO.
If it was limited to an hour driving but I could spend a lot of time studying and training first, then I'd say a late model KERS-equipped F1 car or maybe even the Audi R18 E-Tron.

I figure if it's only one hour, it's got to be something that I'd have absolutely zero chance of ever driving otherwise.
You never said it had to be real.

That's easy. One of these:
All #72, driven by my mom's cousin James "Tiger" Fillingim; he was the only other gearhead in my family besides me, but cancer got him at 44 before I ever got to meet him (I grew up in Chicago and he was on the Mississippi Gulf Coast).
RIP Tiger.
